            50 g grated aged Pecorino cheese
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;

            2 tbsp Lo Scalandrino bio extra virgin olive oil
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        &lt;span&gt;&#xD;
          
             salt and freshly ground black pepper
            &#xD;
        &lt;/span&gt;&#xD;

            sprig of rosemary chopped

           Method
          &#xD;

            Clean and slice the porcini mushrooms. If using dried porcini, rehydrate in 150 ml warm water for 20 minutes.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        &lt;span&gt;&#xD;
          
             In a large pan, warm 1 tbsp Lo Scalandrino bio extra virgin olive oil and 25 g butter over medium heat. add the pancetta and cook until the fat is rendered and crisp. Sauté onion and garlic until translucent.
            &#xD;
        &lt;/span&gt;&#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Add rosemary, thyme and mushrooms; cook 5 minutes until soft. Pour in wine and let evaporate.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Stir in rice to coat each grain, then ladle in hot broth one cup at a time, stirring gently.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Continue adding broth as it absorbs, about 18–20 minutes total, until rice is al dente and creamy. Remove from heat; stir in remaining butter, aged Pecorino cheese, salt and pepper to taste.

As these hill towns faded, interest shifted toward the fertile plains, rich with opportunities for farming, fishing in the now-vanished Lake Prile, and collecting salt from the coastal ponds. Archaeological discoveries, including Villanovan and Etruscan artifacts from as early as the seventh century BC, confirm that this region has been inhabited by ancient civilizations for millennia.

Under the direction of Grand Duke Francesco I de' Medici, new walls were constructed between 1574 and 1593. This ambitious project transformed Grosseto into a military fortress with a hexagonal perimeter, polygonal ramparts, and a surrounding moat.

Nestled in the heart of the Maremma region, our fledgling organic veg patch has this year yielded aubergines, pepper, tomatoes and soon-to-come potatoes—ingredients we transform into simple yet elegant recipes. In this post, we put a local spin on classic melanzane caponata, using our own Lo Scalandrino bio extra virgin olive oil to elevate every bite.

            1 tbsp granulated sugar

      &lt;/span&gt;&#xD;

            10 g pine nuts (optional)

      &lt;/span&gt;&#xD;

             small bunch fresh basil leaves, torn - reserve some leaves for decoration

            salt and pepper to taste

           For crostini:

            1 rustic Tuscan loaf, sliced
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Lo Scalandrino bio extra virgin olive oil
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            1 garlic clove
           &#xD;
      &lt;/span&gt;&#xD;

           Method
          &#xD;
    &lt;/strong&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;ol&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            In a heavy skillet, warm half of Lo Scalandrino bio extra virgin olive oil over medium heat. Add aubergine cubes , season lightly, and sauté until golden. Transfer to plate.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Add the remaining olive oil, then onion, celery and peppers. Cook until softened, about 4—5 minutes. Stir in garlic and tomatoes; cook for 2 minutes more.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Pour in vinegar and sugar, stir well, then return aubergines to the pan. Add basil, salt and pepper. Simmer gentle for 8—10 minutes, until flavours meld. Remove from heat and let cool to room temperature.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Meanwhile, brush bread slices with Lo Scalandrino bio extra virgin olive oil and grill until crisp. Rub each slice with garlic.

      &lt;span&gt;&#xD;
        
            In a dry frying pan, gently roast the pine nuts for 1—2 minutes and set aside.

            celebrating the post-pandemic revival of rural Tuscany and spotlighting a couple of hopeful agricultural and agritourism projects—including ours. At the time, it felt like an early whisper of possibility, a nudge to turn dreams of olive groves and sunlit green spaces into reality.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           In the weeks that followed, we rolled up our sleeves. Tired stone walls were gently repointed in fresh Mediterranean hues, water pipes relaid, fences rebuilt and gates fixed to swing in effortless welcome. We measured out terraces, and wrestled with layout plans that would welcome guests without ever losing the Lo Scalandrino’s simple charm.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           By spring, hundreds of olive trees had been pruned and coaxed back to lush vitality. We re-seeded the vegetable garden, and replaced every bathroom in the guest quarters, each renovation a quiet promise of comfort.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Early summer arrived with soft, earthy paint on freshly furnished guest rooms—muted terracotta, pale sage, warm cream and light shades of blue—colours chosen to mirror the landscape beyond each glass pane. Every brushstroke and piece of new furniture felt like a pledge that this place would grow alongside its owners and visitors.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Then came August 9, 2025—almost exactly nine months after that MaremmaOggi story was published—and we opened our doors. The sound of suitcases clatter on the gravel drive, the ripple of laughter drifting from the grounds: it was that moment when a single seed finally breaks through the soil—fragile, miraculous, alive.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Our first guests woke to the fresh Maremma air—a gentle chorus of sparrows, the scent of dew on olive leaves, and a sunrise that bathed rolling hills and neighbouring vineyards in warm light. They lingered on the terrace over a sumptuous breakfast of creamy ricotta, honey-drizzled yogurt, warm home-made bakes, and a rich espresso or herb tea, each bite savoured as they soaked in the simple beauty of their surroundings.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           In the months ahead, we’ll introduce intimate outdoor dinners by the stone oven, guided wine trails through nearby estates, and hands-on cooking workshops in our country kitchen. Each new experience will be another chapter in a story that began with a single article and grew into something far more enduring.

           Having decided to escape the relentless pace of Malta, my wife and I packed our lives into a few suitcases, and together, we moved from our country to Tuscany. Every sunrise over the olive trees reminded us why we chose this path: to slow down, rediscover wonder, and invite others to do the same.

  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;

           The Simple Ladder That Inspired Us

           Our name comes from a rustic wooden ladder—scalandrino—that farmers traditionally used to climb over hedges and fences. It wasn’t built to impress; it was built to endure. Weathered by seasons, it stood as a testament to resourcefulness and the unpretentious beauty of rural life.

           We invite our future guests to let the spirit of the scalandrino guide them; to pause atop our terraces, in the aromatic tapestry that is unique to our landscape, and look outward; to discover new views, forge unexpected connections, and carry home a fresh perspective. May our guests be inspired to climb higher in their own life—and to explore what lies just beyond the next hedge.

           Life in Malta was vibrant and dynamic, filled with the energy of urban living. The Mediterranean sun illuminated our daily routines, while the island’s rich culture and history provided endless opportunities for exploration. Yet, beneath the surface of our busy lives, a longing for change began to grow - a desire to escape the relentless pace, the crowded streets, and the rapid development that left us yearning for space, tranquillity, and a deeper connection to nature.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           The decision to leave Malta wasn’t easy. It meant parting with family, friends, and the familiar comforts of home. However, the call of a simpler, more fulfilling life in the countryside was impossible to ignore. We set our sights on Maremma, a stunning region in Tuscany known for its rolling hills, lush vineyards, and ancient olive groves. This enchanting corner of Italy felt like the perfect place to begin our next chapter.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;strong&gt;&#xD;
      
           Starting Fresh in Tuscany
          &#xD;
    &lt;/strong&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Our new home, a charming but somewhat neglected farmhouse surrounded by acres of overgrown olive trees, captured our hearts instantly. The property was bursting with potential, but it also presented significant challenges. From restoring the 75-year-old farmhouse and its outbuildings to reviving the neglected olive groves, we knew we were embarking on an ambitious journey.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Gone were the suits, ties, and city commutes. They were replaced with overalls, sturdy boots, and long days immersed in the rhythms of rural life. Each morning now begins with the rustle of leaves and the scent of wildflowers on the breeze. Our days are spent tending the olive trees, learning the art of olive farming, and working on our dream of producing an organic and high-quality Tuscan extra virgin olive oil.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           During our first olive harvest, we gathered only a modest amount of fruit—just enough to produce a small batch of oil for tasting. But the experience was transformative. The prospect of nurturing these trees to their full potential and achieving a full harvest next year fills us with pride and anticipation.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;strong&gt;&#xD;
      
           Embracing Community and Tradition

    &lt;/strong&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           One of the greatest joys of our new life in Maremma has been the warm embrace of the local community. With the support of my wife’s aunt and her husband, along with our welcoming neighbours - many of whom are seasoned farmers - we’ve gained invaluable insights into the traditions and techniques of olive farming. Their stories and guidance have deepened our appreciation for the land and its history, fostering a sense of belonging that feels as timeless as the olive trees themselves.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;

           As we restore the olive groves and modernize the farmhouse, we are also laying the groundwork for a new venture: our agritourism business. Soon, we will open our doors to travellers seeking an authentic Tuscan experience. Guests will enjoy self-catering apartments and comfortable rooms, complete with breath-taking views of the countryside.

  &lt;p&gt;&#xD;

           Our vision is to offer more than just accommodation. We want to share our journey, inviting visitors to join us in the olive groves, learn about the farming process, and experience the tranquillity and charm of rural Tuscany. Whether it’s savouring fresh olive oil, wandering through the gardens, or simply soaking in the peaceful surroundings, we hope to create an unforgettable escape for those seeking a taste of life in Maremma.

As we continue to grow into our roles as farmers and hosts, we are committed to preserving the traditions of Maremma while exploring new opportunities for growth.
